Edit the text in place
Most things called a PDF editor really rebuild the page from scratch. They read it, guess at its structure, and build a new document that resembles it. For a plain page of body text that can be good enough. For anything with a table, a letterhead, a form, or a font you do not have, the result is visibly not the document you started with.
Changing text is a narrower job and a solvable one. The page already records exactly what text it draws and where. Replacing a phrase means editing that record and balancing out the width difference, so the rest of the line lands where it always did.
What can be replaced
Anything drawn as text: a name, a number, a date, a reference, a line in a table, a phrase in a paragraph. The replacement can be shorter or longer than the original, as long as it fits the line — paragraphs are not reflowed. It also cannot use characters the font in that spot does not carry, and it tells you that before you decide rather than after.
The quick test: text you can select in a PDF reader is text this can change. Text you cannot select is a picture, and no amount of editing will reach it.
